Stauning is stunning. The aroma is bright and rich with flawours. There even seems to be aged spirits. But this is most likely how rye manifests itself. Honey-rye tones give way to a dusty chest and buckwheat porridge. Taste with wine notes, oak and shades of noble wood. Bright honey-peppery aftertaste. Very tasty and strongly recommended.
To be honest… the whiskey had to grow on me. I'm not the biggest rye lover out there. The percentage could have been a bit higher for a bit more power, but it is certainly a decent whisky.

Single malt drinkers will need to get used to such a different profile.
aroma Young, grain, rye, different, rye bread, red fruit, herbs, spicy The taste Rye, grassy, spicy, astringent, slightly metallic note reverberation, Medium-length, rye-like, astringent, thinning. It gains with every sip. Tendency towards 83
Quick note: The first impression, for me, is full of rye, knotweed pastilles, and a lovely oily spiciness. Later, port sweetness and dark fruits blend in. Despite only 40.5%, it's not thin, but rather full and warm. A must-have for anyone who likes Stauning, and for those who want to get to grips with the distillery, this is the perfect starter for getting to know the distillery. I really like it!

Tasty but could do with a few percent more. Official description: Named after the Danish word for "harvest," HØST is a tribute to the changing seasons in which the raw materials needed to make whisky are created. This blended malt combines rye and single malt whisky from grain grown just a few kilometers from the distillery. Featuring bourbon casks and heavily charred new American white oak, Stauning HØST offers a distinctive flavor profile. Final maturation in first-fill port casks adds floral nuances and enriches the fruity experience.
"Stauning HØST is a smooth, fruit-forward, and floral whisky, reminiscent of the warmth and comfort of the late summer Danish sun during the harvest time of our meticulously selected and locally sourced rye and barley. This double malt whisky is crafted in Denmark with a marriage of single malt and malted rye whisky, aged in American oak casks and with a touch of Port wood. A distinctly Danish approach to whisky: designed with intentionality, simplicity, sustainability, timeless style, and a touch of "hygge". Using 100% floor malted local Danish rye and Danish barley, we craft a timeless whisky style distinguished by its profound depth of flavour and quality. Double distilled in 24 small, direct-fired copper pot stills to produce malt whisky with a rich flavour." Overall WHEW. I think this is nice. I never had a Double Malt before but I do like this one. From what I heard it is 70% barley and 30% rye. In this whisky we can see how strong rye really is. Also it is very nice that it was not chill-filtered. The whisky stayed very oily and flavourful. Their different distillation method is probably giving tons of flavour to the whisky and the fact that they also used port casks for this bottle is giving even more flavours to the mix. I love the fact that they use local barley and rye. I think this is a distillery to look out for. I rate this bottle a whopping 88 / 100. I am really, truly surprised by it. For me it is a breath of fresh air in the whisky space. I look forward to tasting their other releases too. Buy it, try it. Drink responsibly. Sweet on the nose, very grainy, with butter cookies, a hint of wet paper, caramel, mint, and a touch of citrus. A little better on the tongue, with more fruit and citrus, grain, vanilla, sponge cake, and a touch of pepper. Medium finish, grainy and citrusy.

Quick hit review. Stauning Høst uses both barley and rye, so strictly speaking this should be a single grain (and not a double malt). Quite floral, green and distinctly different, the nose reveals fresh pears, raw potatoes and wood polish. Lemon peel and beeswax appear. This is interesting. On the palate, apples, cinnamon and strawberry cream are followed by spearmint and soft tannins. It is a bit thin. More berries, mild spices and hints of grapefruit fade in the short finish. The low bottling strength is the biggest issue here, too bad that they opted for 'smooth and delicate'. RATING: 3.2/5.0 stars ≙ 81 pts → AVERAGE [+]
75/100, festival sample
Tasted this at the Utrecht Whisky Tasting Festival, so these are just my jotted down notes from the day. My first Stauning and probably not my last, quite different, quite surprising, quite tasty! I like it and will probably some day buy a bottle.
It's always nice when you approach a whisky with not-so-high expectations (in my case it was only 40.5%) and then you're so positively surprised. I was particularly interested in the Høst because of its rye content, and at 38 euros a bad buy wouldn't have hurt. Far from it, this is a bad buy - for me it's very drinkable and therefore worth refilling. As always with Stauning, Scotch single malt whisky purists should probably stay away from it.

| Нос | 86 | Even though barley malt has been "mixed in," the rye portion comes through very well, only a little less intense than normal rye. But it is crispy rye bread, slightly charred heather (it's not smoky, but it still gives that impression), a little cinnamon and curry powder, granola, dried figs. |
| Вкус | 86 | Despite only 40.5%, it has a full, oily mouthfeel and is spicy and crispy on the tongue. It's a little surprising that it comes across as so full-bodied. Here, too, the rye predominates, so that rye bread is the first thing you notice. Clear spices (pepper, grated nutmeg, cinnamon, coriander, chervil), heather. Hazelnut brittle, marzipan, slightly bitter forest honey. |
| Финиш | 85 | Almost medium-long finish, still very spicy and tending towards rye, beautiful dried fruits (grapes, figs, dates), sweet marzipan, caramel. |
COLOR: Copper - a special but also very aromatic whisky - very harmonious, tastes round with little disturbing flavors - worth a try - 45 - 50€ is possible
61-70 – Okay, but not more than 1 Dram

I received this whisky as a gift with an order in Brühl. I wasn't expecting much and was pleasantly surprised. It performs well above the 40.5% ABV and has a decent aroma. Since I always have the regular rye open in a large bottle, I don't necessarily need this one. Otherwise, it would definitely be in the bar drawer.

| Нос | 83 | Rye is clearly recognizable and dominates despite its lower proportion. Plenty of sourdough and tangy lemon. After a while, caramel, marigold tea, and summer meadow emerge. |
| Вкус | 82 | The rye is dominant here as well. Rye spice followed by a honey sweetness. It has a pleasant mouthfeel and is surprisingly powerful. I also have the marigold tea here, followed by a pepperiness. Always pleasant, always smooth. |
| Финиш | 83 | Sweet, medium-length, and pleasant. The spice lingers for quite a while. You don't even notice the barrel. |
